Grilled Peach and Arugula Salad with Honey Balsamic Drizzle

A Note on the Peaches: You want ones that yield slightly when you press them, but aren't soft. Overripe peaches fall apart on the grill. Ingredients

For the Salad:

  • 4 medium ripe but firm peaches (about 1½ lbs), halved and pitted
  • 5 oz baby arugula (about 6 lightly packed cups)
  • 3 oz fresh goat cheese, crumbled
  • ¼ cup candied or toasted pecans
  • ¼ small red onion, very thinly sliced
  • 1 tsp olive oil (for brushing peaches)

For the Honey Balsamic Drizzle:

  1. Heat the grill. Preheat a grill or grill pan over medium-high heat and let it come fully to temperature, about 5 to 10 minutes.
  2. Grill the peaches. Brush the cut sides with olive oil. Place cut side down and grill 3 to 4 minutes undisturbed until grill marks appear and the flesh softens slightly. Flip and grill 1 to 2 minutes more. Remove, rest 5 minutes, then slice each half into 3 wedges.
  3. Prep the onion. While the peaches rest, soak the sliced red onion in cold water for 5 minutes to mellow the sharpness. Drain and pat dry.
  4. Make the dressing. Whisk together the balsamic, honey, Dijon, garlic, salt, and pepper. Stream in the olive oil while whisking until emulsified. Open the probiotic capsules, pour the powder into the dressing, and whisk again until fully incorporated.
  5. Build the salad. Spread the arugula on a large serving platter. Scatter the red onion and peach wedges on top.
  6. Finish and serve. Drizzle about two-thirds of the dressing over the salad and toss gently. Top with goat cheese and pecans, drizzle the rest of the dressing over everything, and serve right away.

Notes

  • Dairy-free: Swap goat cheese for thinly sliced avocado or a dairy-free soft cheese.
  • Vegan-friendly: Swap honey for maple syrup or agave. (Agave is the sweetest (about 1½ sweeter than table sugar) so you may want to use a little less and taste until you reach your desired sweetness.)
  • Make it a meal: Add sliced grilled chicken or a handful of cooked farro.
  • Dressing ahead: Make up to 3 days in advance and store in a sealed jar in the fridge. Use garlic powder instead of fresh garlic if prepping more than a day out. Shake the dressing well before using.
