  • 1 cup diced fresh organic peaches
  • 3/4 cup organic blackberries, halved

For Topping:

  • 1 tablespoon coconut sugar
  • Extra peaches and blackberries for topping

Directions

  1. Preheat your oven to 350°F. Line a 9-inch cake pan with parchment paper, allowing a slight overhang for easy removal.
  2. In a small saucepan, gently warm the butter and maple syrup together until combined.
  3. In a large mixing bowl, whisk together the eggs, maple syrup mixture, lemon juice, and lemon zest until smooth.
  4. In a separate bowl, combine the almond flour, cassava flour, coconut sugar, ground vanilla, baking soda, baking powder, salt, and contents of Just Thrive Probiotic capsules.
  5. Pour the wet ingredients into the dry ingredients, and stir until fully combined.
  6. Gently fold in the peaches and halved blackberries.
  7. Transfer the batter to the prepared cake pan and smooth the top. Arrange additional peaches and blackberries over the surface, gently pressing them into the batter.
  8. Sprinkle the coconut sugar evenly over the top.
  9. Bake for 40 to 42 minutes, or until golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  10. Allow the cake to cool completely before slicing. This helps the cake set properly and creates the perfect texture.
