Blackberry Banana Oat Muffins

Muffins are the perfect grab and go breakfast! And what makes these blackberry banana oat muffins extra special is that they’re made with healthy ingredients to fuel your body.

The bananas add great texture and flavor to the muffin, while also adding some sweetness! You won’t need to add a lot of sugar to this recipe thanks to the bananas, cinnamon, and fresh blackberries.

One of my favorite things about this recipe is how easy it is to make. You can bake the muffins on the weekend and enjoy them throughout the week! Plus, it’s the easiest way to take your daily Just Thrive Probiotic!   • Cinnamon: Has been shown to improve insulin sensitivity and regulate blood sugar levels.
  • Greek Yogurt: Very nutrient rich with calcium, vitamin D, and probiotics. Also, greek yogurt is high in protein.
  • Rolled Oats: High in fiber which promotes satiety, reducing hunger and potentially aiding in weight loss. Oats also provide essential vitamins and minerals, including magnesium, zinc, and B vitamins.
  • Eggs: Eggs provide a wide range of essential nutrients, including vitamins (A, D, B12), minerals (selenium, phosphorus), and protein.

Blackberry Banana Oat Muffins

Prep Time: 15 minutes
Cook Time: 15 minutes (per batch)
Total Time: 30 minutes
Servings: 12 muffins
Diet: Gluten-free

Ingredients:

Directions:

  1. To a large mixing bowl, add the melted butter, brown sugar, eggs, mashed bananas, and vanilla greek yogurt.
  2. Mix together using a whisk until combined.
  3. Add in the flour, rolled oats, baking soda, baking powder, ground cinnamon and contents of the Just Thrive Probiotic capsules.
  4. Fold into the batter using a silicone spatula.
  5. Once combined, toss the blackberries in 1 tbsp of flour, then add to the batter.
  6. Gently fold into the batter until evenly spread out in the batter.
  7. Rest the batter at room temperature for 30 minutes.
  8. While the batter is resting, preheat the oven to 425 degrees F.
  9. Add muffin liners in every other space in your muffin pan. This is optional, but allows the muffins to rise higher.
  10. Portion out the batter into the muffin liners using a 2 tbsp cookie scoop. It should fill each about 3/4 of the way.
  11. Bake at 425 degrees F for 7 minutes, then reduce the temperature to 350 degrees F and bake for an additional 7–9 minutes.
  12. Remove the muffins from the oven when a toothpick comes out of the center clean.
  13. Let cool slightly and enjoy!

Storage:

Store in an airtight container at room temperature for 3 days or in the fridge for up to 7 days.
