  1. Preheat your oven to 350°F. Line a large baking sheet with parchment paper.
  2. Make sure your bananas are at room temperature before you start. Cold banana will cause the coconut oil to seize and distribute unevenly. Mash until smooth with very few lumps, then measure. You need ¾ to 1 cup; discard or save any excess for another use.
  3. Add the honey, melted coconut oil, egg, and vanilla to the mashed banana. Stir until fully combined.

  5. Add the rolled oats, cinnamon, salt, and baking powder. Stir until a thick, cohesive dough forms.
  6. Fold in the dried berries.

Storage

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They also freeze well; layer between parchment, and freeze for up to 2 months. Grab one the night before, and it's ready by morning.
