Ingredients

Directions

  1. In a large skillet on medium, cook your onions in olive oil until translucent. Add in your garlic and cook for an additional two minutes.
  2. Add in your chicken, seasonings, black beans, corn, can of tomatoes and chilis, salsa verde, and chicken broth. Bring to a simmer.
  3. Stir in your rice and probiotic powder from capsules. Cover with a lid and simmer for 20 minutes until the rice is cooked (or less depending on rice directions).
  4. Top with cheese of choice, and add the lid back on until the cheese is melted.
  5. Finally, pull skillet off heat, add sliced avocados and any other toppings you'd like, serve, and enjoy!
