I love to bake, and I love to eat healthy baked goods, but...
Baking can sometimes be a little too involved, with lists of ingredients that require precise portioning, tireless mixing, and complicated combining.
And on weekends when I’m craving some baked goodness, but feeling a little a bit lazy, I much prefer things that are super simple.
If you’ve ever tried making a coconut yogurt tart at home before, you know that simple is typically NOT par for the course.
But, in my recipe below, I’m rewriting the coconut tart manual… And making it easy and healthy!
2 Ingredients, That’s All You’ll Need.
To make a healthy and delicious (and vegan) coconut yogurt at home you need only 2 ingredients:
👉 Full-fat coconut milk
👉 A proven probiotic
Of course, my go-to gut health superhero is Just Thrive Probiotic.
I’ve tried many different brands, and these strains are hands down my favorite.
They have 1000x better survivability vs. Greek yogurt & leading probiotics – In fact, because of their natural endospore shells, the beneficial bacteria can pass completely unharmed through your stomach so they can go to work in your gut where they’re needed most!
I love that they’re formulated without any gluten, dairy, sugar, or nuts.
And, they’re non-gmo and vegan which makes them the perfect addition to this recipe...
Do Probiotics Mix Well With Any Recipe?
The short answer is:
The secret is selecting a specific type of probiotic.
Only a strain known as spore probiotics have the fortitude and strength to withstand ANY recipe requirement.
Unlike most probiotics on the market, you can add spore probiotics – Like the strains found in Just Thrive’s award winning Probiotic & Antioxidant – to just about anything!!
As an example:
Just Thrive’s spore-based probiotic is tasteless, odorless, and mixes perfectly into any recipe.
Yes, even if you throw it into a stovetop stir fry on high heat.
Yes, even if you bury it in banana pudding and deep freeze it.
And yes, even if you beat it into a brownie mix and THEN put it into the oven to bake at 400…
(Parents - this is especially useful if you have a little one at home who has a hard time swallowing pills)
Spore probiotics – the specific, proprietary super strains in Just Thrive’s probiotic – are wholly unique and amazingly resilient.
And that’s no exaggeration.
🏆 Super Strain Bacillus Indicus HU36
This is the strain that makes Just Thrive Probiotic such a game-changer in the probiotic market. Bacillus HU36 is a well-studied, unique, patented strain that offers the most effective probiotic & antioxidant support on the market.
In fact, HU36 turns your digestive tract into an antioxidant factory, producing the digestive and immune support necessary to neutralize free radicals (toxic by-products that damage your cells.)
When it comes to fighting free radicals, antioxidants are your body’s most trusted warriors. And stopping free radicals is a MUST if you want to feel your best.
🏆 Super Strain Bacillus Subtilis HU58
Bacillus Subtilis has been extensively studied on a genetic and functional level. One of this strain’s very interesting characteristics is its ability to effectively fight against opportunistic and harmful bacteria.
Bacillus Subtilis also produces a number of other nutrients that have systemic health benefits and has been shown to supercharge the growth of your natural, beneficial bacteria.
To boot, this strain is so resilient that researchers at California Polytechnic State University reported reviving Bacillus spores from the gut of a 25-million-year-old bee that was fossilized in amber!
And now, without any further ado, on to the recipe...
Coconut Yogurt Tart Recipe, Powered by Just Thrive Probiotic
📍 1 can coconut milk
📍 1 capsule of Just Thrive Probiotic (open capsule, and sprinkle into coconut milk)
Prepping the yogurt is a simple, 3-step process:
- Empty coconut milk into a clean glass jar or bowl
- Open up a Just Thrive Probiotic and stir the contents into your jar
- Cover and wait (12-18 hours)
It doesn’t get any easier than this. And the result is amazing!
Note: After all is prepared, I put the yogurt in a safe place – on the counter or in the oven ( but the oven has to be off ) . After 12 hours you can place the jar in the fridge and enjoy 👌
Pro Tip: It’s important that you choose a reputable coconut milk brand for best results. Whole Foods 365 brand works well. Also, it contains guar gum, which may help create a smooth texture and prevent separation.
VEGAN TART SHELL:
📍 1 cup pecans
📍 3/4 cup dates
📍 1 tbs water
To create the tart shell:
- Mix all in a blender and blend completely
- Spread the blend into tart molds
To create the full coconut yogurt tart:
- Pour coconut yogurt into the tarts shells
- Top with fresh blueberries
