Vegan Molasses Biscuits

One of my favorite things to do is to cook and create in the kitchen. I especially love bringing my family into the mix, as it brings us all together to create something delicious!  

While I cook all year long, fall is my absolute favorite season to bake! With Thanksgiving right around the corner, there is no better time to teach my girls how to bake my favorite autumn treats, including one of my fam’s favorites: Vegan molasses biscuits. 

These biscuits are perfect to serve to a crowd either as dinner biscuits or for breakfast with some homemade jam. You can even be creative and tie some string around them prior to baking and turn them into little pumpkins! (For dressing up your dinner table bread basket, there’s really nothing cuter.) 

Even better - The biscuits are super easy to make and downright delicious! 

Plus, because it’s very important for me to show my girls that baking can be healthy, I especially like to use whole, plant based ingredients whenever possible. And with the addition of Just Thrive Probiotic, I know we are supporting our immune systems in the absolute best way.

Vegan Molasses Biscuits

Ingredients:

  • 1 cup unsweetened oat milk or almost milk
  • 1 Tbsp fresh lemon juice
  • 2 cups spelt-flour (or Bobs gluten-free all purpose baking flour or almond flour)
  • 1 tsp blackstrap molasses
  • ½ tsp baking soda
  • ¾ tsp sea salt or pink salt
  • 4 Tbsp cold vegan butter (Miyokos is my favorite)
  • 2 capsules of Just Thrive Probiotic (open the capsule and sprinkle in)

Directions:

  1. Preheat the oven to 450 degrees
  2. Mix lemon juice, molasses and plant based milk of your choice (I used oatmilk)
  3. Set aside.
  4. Mix all of the dry ingredients together.
  5. You can mix with your hands or a fork to mash the cold butter up.
  6. Slowly add in the liquid ingredients and mix until cookie dough batter texture.
  7. Flour the surface and form 1 inch disks.  Makes about 8.
  8. Bake for about 15 minutes.
  9. Let cool and top with your favorite butter or jam and enjoy!

Note: For “pumpkin” biscuits, you just tie some string around the dough prior to baking.
