Seasonal eating is incredible for gut health. Right now is one of my favorite food seasons of the year – Strawberry season! There is nothing like a strawberry picked at its peak. They are ruby red, juicy and extremely flavorful… And one of the first desserts I think of when I think of a strawberry is a strawberry shortcake. My favorite ever summer treat as a kid were those strawberry shortbread ice cream bars.
