Grandmother’s Magic Crepes

Are grandmothers naturally wired to make magic in the kitchen? I mean, think about it – have you ever made or even tasted a dish your grandmother used to make, and then felt like you were transported back in time to a place where everything’s warm, comforting, and delicious? How do they do it?

It's like there's some secret ingredient that grandmothers put in their dishes that makes everything amazing – maybe it's a pinch of love, a dash of nostalgia, or just some good old-fashioned grandma wizardry :)

My grandmother – Grandma Joka – was one of those near-mythical kitchen magicians, and her crepes were always a family favorite. Every time I make her recipe, I'm whisked back into any number of happy family memories. 

Crepes are one of my absolute favorite breakfast foods – they're easy to make, versatile, and perfect for any occasion. There's something so satisfying about biting into a warm, buttery crepe that's been adorned with your favorite toppings

But here's the thing – 

While my grandmother's crepes are undeniably delicious, they're not exactly the healthiest food out there. I'm including the original ingredients that my grandmother used (because that's how she made them), but I'm also providing some healthier ingredient alternatives so that health-conscious readers can still enjoy.

One last thing – There’s a secret ingredient that I add to this and just about every recipe (and I’m pretty sure Grandma would’ve approved :) – Just Thrive Probiotic. Grandmother’s Magic Crepes

Servings: 26-28 crepes 
Prep time: 5 minutes
Cook time: 15-20 minutes
Total time: 25 minutes
Course: Breakfast, Brunch, Dessert

Ingredients:

  • 3 cups flour (or use a gluten free option like this
  • 1 tsp salt
  • 3 Tbsp sugar (or use a 1:1 sugar substitute like this)
  • 2 eggs
  • 1 stick butter (can swap with ghee or olive oil) 
  • 1 quart warm milk (or use a dairy free option like this
  • 1 tsp vanilla
  • 1 Tbsp traditional shortening (or use a healthier option like this, or a cooking spray) 

Directions:

  1. Combine ingredients in mixer and beat to a smooth, thin dough
  2. Heat about 1 Tbsp of shortening over medium heat,
  3. Pour ¼ cup of batter, tilting the skillet in a circular motion until batter covers the entire bottom.
  4. Brown very lightly, then flip to the other side until lightly browned.
  5. Place on a large plate
  6. Continue frying crepes, adding ¼ tsp shortening for each crepe until all batter is used.  
  7. Spread each crepe with butter, roll up, and enjoy!  

You can also spread each crepe with a filling of your choice. Maple syrup, “healthy nutella”, cheese fillings or fruit jam are all great options!

Lastly… This is a breakfast recipe that can feed a LOT of people. I like to make a big batch and refrigerate at least half so I can grab and go in the mornings.
