Dazzling Artichoke Probiotic Dip

You’ll be sure to dazzle your friends’ taste buds while helping them ring in 2022 with a health-positive start! 

I don’t know about you, but one of the things I enjoy most about dinner and cocktail parties are the luxuriously creamy dips. Of course, if one of your New Year’s goals is to support your body by giving it more things that can help you thrive, you may want to steer clear from most of these dips, and here’s why:  

Most dips (especially the store bought ones) are filled with dairy, hidden gluten, added calories and fat, and other questionable substances that are just plain bad for you!

Dazzling Artichoke Probiotic Dip

Homemade cashew cheese: 

Ingredients:

  • 2 cups cashews, soaked overnight, then rinsed and strained
  • The powder from 3 capsules of Just Thrive probiotics
  • 1/4-1/2 cup water (start with 1/4)
  • Juice of 1/2 lemon
  • Sea salt and pepper to taste

Steps: 

  1. Place all ingredients in a blender and blend until the consistency is like ricotta 
  2. You may have to add more water (a little bit at a time) until you get just the right texture

Artichoke Probiotic Dip:

Ingredients:

  • 1 tsp avocado oil
  • 2 tbsp red onion, small dice
  • 2 cloves garlic, minced
  • 1 batch homemade cashew cheese (recipe below) or store bought almond milk ricotta (2 cups)
  • 1 340g package frozen artichokes, thawed and roughly chopped
  • 1 454g package frozen spinach, thawed and drained
  • 1 tsp apple cider or red wine vinegar
  • 1 tsp coconut aminos
  • 3 capsules of Just Thrive Probiotic 
  • Sea salt and pepper to taste

Steps: 

  1. In a medium saucepan, heat up avocado oil over medium low heat 
  2. Add red onions and garlic along with a pinch or two of salt 
  3. Saute until translucent, about 10 minutes, stirring occasionally so it doesn't burn
  4. Add the artichokes, spinach, cashew choose or ricotta, vinegar, and coconut aminos, along with a pinch each of salt and pepper
  5. Add the contents of 3 capsules of Just Thrive Probiotic 
  6. Stir to combine and cook over low heat, stirring every few minutes, for about 10 minutes
  7. Serve the dip with your favorite veggies or gluten free chips, crackers, or bread
